  2. Chop the Chocolate: Finely chop 12 ounces of high-quality chocolate (dark, milk, or white – your choice!). Chopping ensures even melting.
  3. Melt the Chocolate: If using a double boiler, fill the bottom pot with water and bring to a simmer. Place the top pot with the chopped chocolate over the simmering water, ensuring the bottom of the pot doesn't touch the water. Stir occasionally until the chocolate is completely melted and smooth. If using a microwave, melt the chocolate in 30-second intervals, stirring in between, to prevent burning.
  4. Temper the Chocolate (Optional but Recommended): Tempering gives your chocolates a glossy finish and a satisfying snap. Using a thermometer, monitor the chocolate temperature. For dark chocolate, heat to 115-120°F (46-49°C), then cool to 88-89°F (31-32°C), and finally reheat to 90-91°F (32-33°C). For milk chocolate, heat to 110-115°F (43-46°C), cool to 84-86°F (29-30°C), and reheat to 87-88°F (30-31°C). For white chocolate, heat to 105-110°F (41-43°C), cool to 82-84°F (28-29°C), and reheat to 86-87°F (30-31°C).
  5. Add Rose Flavor: Once the chocolate is tempered (or simply melted), stir in ½ to 1 teaspoon of rose extract or 1 to 2 tablespoons of rosewater. Start with less and add more to taste. If using dried rose petals, grind them finely and add about 1-2 tablespoons to the melted chocolate.
  6. Fill the Molds: Carefully pour the melted chocolate into your silicone molds, filling each cavity to the top. Gently tap the molds on the counter to release any air bubbles.
  7. Garnish (Optional): If desired, sprinkle a few edible rose petals or a pinch of sea salt on top of each chocolate for added visual appeal and flavor.
  8. Chill: Place the filled molds in the refrigerator for at least 20-30 minutes, or until the chocolates are firm and set.
