  1. First, chill your wine glass: Fill the wine glass with ice cubes to chill it, give it a swirl, and let it sit while you prepare the drink. Discard the ice water just before pouring the drink.
  2. Next, add Aperol: Pour 2 ounces (60ml) of Aperol into the chilled glass. The vibrant orange color is just the beginning of the experience. I sometimes use a little more if im in the mood for something stronger.
  3. Add Prosecco: Top with 3 ounces (90ml) of chilled Prosecco. Pour slowly to maintain the fizz. Listen for that satisfying hiss as the bubbles rise! I remember one time I poured to fast and made a HUGE mess.
  4. Add a splash of Soda Water: Add a splash of soda water (about 1 ounce or 30ml) to lighten the drink and add extra fizz. I actually sometimes use tonic water.
  5. Give it a gentle stir: Use a bar spoon to gently stir the ingredients together. Be careful not to over-stir, as this can flatten the bubbles. A couple of light turns is all you need.
  6. Garnish with an orange slice: Garnish with a fresh orange slice. The orange not only looks beautiful but also enhances the citrus notes of the drink. I think it really makes the spritz feel complete.
  7. Serve immediately: Serve your Hugo Spritz immediately and enjoy responsibly! I like to enjoy mine while reading a book.

  • Adjust sweetness by adding more or less Aperol.
  • Feel free to add a green olive, or lemon instead of orange
