  1. Chill your glassware: Pop your wine glasses or coupe glasses into the freezer for about 10-15 minutes to get them nice and frosty. A chilled glass makes all the difference!
  2. Infuse the lavender syrup: In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved. Add 2-3 tablespoons of dried lavender flowers. Remove from heat and let steep for 30 minutes, then strain. Store in the fridge!
  3. Prepare your lemon: Cut a few thin slices of fresh lemon for garnish. You can also express a lemon peel over the glass to release its fragrant oils. This is one of my favorite little details!
  4. Muddle Mint (optional): Gently muddle 5-6 mint leaves in the bottom of your chilled glass, it brings freshness. Be careful not to over-muddle, or it will become bitter. *Optional: Skip mint if you prefer
  5. Assemble the Spritz: Fill your chilled glass with ice cubes, you can use crushed if you would like a more diluted and cold beverage
  6. Add Liqueur: Pour in 1.5 ounces (45ml) of elderflower liqueur (St. Germain is a popular choice).
  7. Lavender Syrup: Add 1 ounce (30ml) of the lavender syrup you prepared. Adjust to your preference, depending on how sweet you like your cocktails.
  8. Top with Bubbles: Fill the rest of the glass with chilled Prosecco or other dry sparkling wine, leaving a little space at the top.
  9. Add Club Soda: Top with a splash of club soda or sparkling water for extra fizz.
  10. Garnish: Garnish with a lemon slice and a few fresh or dried lavender sprigs. A sprig of mint also works well!
  11. Stir Gently: Use a long spoon to gently stir the ingredients together. Be careful not to over-stir, as you don't want to lose too much of the fizz.
