Remember those Friday nights growing up? My family always ordered in pizza, and my mom secretly made chicken parmesan. It was our little tradition. Well, now that I'm watching my carb intake, I had to come up with a keto-friendly version of this comfort food classic, and let me tell you, it's just as satisfying! The secret? Almond flour and parmesan cheese create a crispy coating that rivals the traditional breadcrumb version.

🍽 Ingredients

📖 Instructions

  1. First, prepare your chicken: place your chicken breasts between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/2 inch. This helps ensure even cooking.
  2. Next, make the breading station: in one shallow dish, whisk together the eggs and heavy cream. In another shallow dish, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Make sure these are mixed well together. Its better this way.
  3. Bread the chicken: dredge each chicken breast in the almond flour mixture, pressing gently to coat. Then, dip it into the egg mixture, allowing any excess to drip off. Finally, dredge it again in the almond flour mixture, ensuring it's fully coated. A double coat is key for extra crispiness!
  4. Time to pan-fry: heat olive oil in a large skillet over medium heat. Once hot, carefully place the breaded chicken breasts in the skillet, making sure not to overcrowd the pan. Cook for about 5-7 minutes per side, or until golden brown and cooked through. Be sure to keep an eye on the heat to prevent burning. It happends.
  5. Add the sauce and cheese: place the fried chicken breasts in a baking dish. Spoon marinara sauce over each chicken breast, followed by a generous sprinkle of shredded mozzarella cheese and more grated Parmesan cheese. I lovvvve cheese.
  6. Bake to perfection: bake in the preheated oven for 10-15 minutes, or until the cheese is melted, bubbly, and lightly browned. Keep and eye, and enjoy!
  7. Garnish and serve: remove from the oven and garnish with fresh basil leaves, if desired. Serve immediately and feel proud of yourself.

📝 Notes

  • For a spicier kick, add a pinch of red pepper flakes to the almond flour mixture.
  • If you don't have almond flour, you can use finely ground pork rinds as a substitute.
  • Serve with zucchini noodles, cauliflower rice, or a side salad for a complete meal.
