I remember when I first thought of this recipe. It was a late night; craving both tacos and a cheeseburger. Instead of choosing, a lightbulb went off. Why not both? And honestly, it was the best culinary decision I've ever made. My family agrees. And hopefully, you will too!
The recipe itself is surprisingly straightforward. We're talking seasoned ground beef, crispy bacon, melted cheese, and all your favorite burger toppings nestled in a warm tortilla. You can customize it however you want! I really like adding a creamy burger sauce to tie it all together, you might consider that too. It’s a party in your mouth, and it's ready in under 30 minutes, give or take, depending on my ADHD.
Whether you're hosting a casual get-together, need a quick weeknight dinner, or just craving something a little different, these tacos are a guaranteed crowd-pleaser. Get ready to experience the ultimate fusion food and prepare for some smiles! Plus, cleanup is super easy - which is always a win in my book, especially if i'm doing it.

📖 Instructions
Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain excess grease. Once cooled slightly, crumble or chop the bacon into small pieces. Set aside.
Brown the Ground Beef: In the same skillet (after removing most of the bacon grease, but leaving about a tablespoon for flavor!), add the ground beef. Cook over medium-high heat, breaking it apart with a spoon, until fully browned. Drain any excess grease.
Season the Beef: Add the taco seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper to the ground beef. Stir well to combine. Add the beef broth or water. Reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, to allow the flavors to meld together. This is when you can make you're own taco seasoning if you're feeling fancy!
Warm the Tortillas: While the beef is simmering, warm the tortillas according to package instructions. You can do this in a dry skillet, in the microwave wrapped in a damp paper towel, or in the oven wrapped in foil.
Assemble the Tacos: Lay out the warm tortillas on a clean surface. Spoon a generous amount of the seasoned ground beef onto each tortilla. Top with the crumbled bacon, shredded cheese (cheddar, Monterey Jack, or a blend work well), chopped tomatoes, shredded lettuce, diced onions, and sliced pickles.
Add the Burger Sauce (Optional): Drizzle your favorite burger sauce or Thousand Island dressing over the toppings for an extra layer of flavor. Or you can skip it, I won't judge you.
Serve Immediately: Serve the Bacon Cheeseburger Ground Beef Tacos immediately while they are warm and the cheese is melted. Enjoy!
📝 Notes
Add jalapenos for a spicy kick.
Use a leaner ground beef to reduce grease.
Serve with sour cream or guacamole for added flavor.
