Stir occasionally until smooth. Remove from heat and let it cool slightly. I like to use Ghirardelli white chocolate chips because they melt really nicely. Pro-tip: make sure not to get ANY water in the melting chocolate, or it will seize up and be ruined! I may or may not have experience with this…
  3. In a separate bowl, whisk together the egg yolks and sugar until the mixture is pale and slightly thickened. This usually takes about 2-3 minutes with an electric mixer or a bit longer if whisking by hand.
  4. Gradually whisk the cooled white chocolate mixture into the egg yolk mixture until well combined. Sift in the matcha powder and flour, then gently fold until just incorporated. Be careful not to overmix.
  5. In a clean, dry bowl, beat the egg whites with an electric mixer until stiff peaks form. This is crucial for the soufflés to rise, so take your time and make sure the whites are properly aerated. They should stand up straight when you lift the beaters.
  6. Gently fold about one-third of the beaten egg whites into the matcha mixture to lighten it. Then, gently fold in the remaining egg whites in two additions, being careful not to deflate the mixture. It should be light and airy.
  7. Divide the batter evenly among the prepared ramekins. Run your thumb around the inside edge of each ramekin to create a well, which helps the soufflé rise evenly. Place the ramekins on a baking sheet.
  8. Bake for 15-20 minutes, or until the soufflés are puffed up and golden brown. The centers should still be slightly jiggly. Do NOT open the oven door during baking, or they might collapse!
  9. Remove from the oven and dust with powdered sugar, if desired. Serve immediately, because these babies don't wait for anyone!
