  1. Prepare the Strawberries: Hull and slice 1 pound of fresh strawberries. Reserving a few pretty ones for garnish.
  2. Make the Strawberry Puree: In a blender or food processor, puree the sliced strawberries until smooth. You should have about 1 1/2 cups of puree. If it's a little chunky, don't worry too much! A bit of texture is nice.
  3. Bloom the Gelatin: In a small bowl, sprinkle 2 teaspoons of unflavored gelatin over 1/4 cup of cold water. Let it stand for 5 minutes to bloom. This is important; don't skip this step!
  4. Heat the Strawberry Puree: In a saucepan, combine the strawberry puree and 1/2 cup of granulated sugar. Heat over medium heat, stirring constantly, until the sugar is dissolved and the mixture is simmering.
  5. Dissolve the Gelatin: Remove the saucepan from the heat and add the bloomed gelatin. Stir until the gelatin is completely dissolved. Make sure there are no little gelatin clumps hanging about!
  6. Add the Bourbon: Stir in 1/4 cup of bourbon. I like using a good quality bourbon for the best flavor, but any bourbon you enjoy will work. Remember the heat from the mixture might cause it to ignite be careful!

  10. Portion and Chill: Divide the mousse among individual serving glasses or bowls. Cover with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the mousse to set completely. Is best served chilled!
