  1. First, get started by cooking the quinoa according to package directions. Usually, this involves rinsing 1 cup of quinoa and then simmering it in 2 cups of water or broth for about 15 minutes, or until all the liquid is absorbed. Let it cool slightly.

In a large mixing bowl, combine the cooked and slightly cooled quinoa, ground chicken, drained and rinsed black beans, chopped onion, minced garlic, egg, breadcrumbs, cilantro, cumin, chili powder, salt, and pepper.   3. If you have a food processor, throw in the cooked quinoa, black beans, onion, garlic, cilantro, cumin, chili powder, salt, and pepper and pulse a few times to combine. Then add the ground chicken and egg, and pulse gently until just combined. This creates a smoother texture, but either method works great!
  4. Now, divide the mixture into equal portions, about 1/2 cup each. Gently form each portion into a patty about 3/4 inch thick. Make sure they're not too thick or they might not cook evenly.
  5. Heat a skillet over medium heat and add olive oil. Once the skillet is hot, carefully place the patties in the skillet, making sure not to overcrowd the pan. You might need to cook them in batches.
  6. Cook the burgers for about 5-7 minutes per side, or until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C). Use a meat thermometer to check!
  7. Remove the cooked burgers from the skillet and place them on a plate lined with paper towels to drain any excess oil.
