  1. First, gather your vegetables: 1 red bell pepper, 1 yellow bell pepper, 1 zucchini, 1 red onion, 8 ounces of cherry tomatoes, and 1 eggplant. Give em’ a good wash.
  2. Next, chop all vegetables into 1-inch chunks. It's importaint to make sure they are roughly the same size so they cook evenly.
  3. In a mixing bowl, make the marinade. Whisk together 1/4 cup olive oil, 2 tablespoons balsamic vinegar, 2 cloves garlic (minced, of course!), 1 teaspoon dried oregano, 1/2 teaspoon dried basil, salt, and pepper to taste. Don't be shy with the herbs!
  4. Add the chopped vegetables to the bowl with the marinade. Toss to coat all of the vegetables evenly. Make sure every piece gets some love.
  5. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes. Longer is better. If you are in a rush, you can marinate the vegetables for only 15 minutes.
  6. While the vegetables are marinating, if using wooden skewers, soak them in water for at least 30 minutes to prevent burning. I know, I know... another thing to wait for.

  8. Thread the marinated vegetables onto the skewers, alternating colors and types of vegetables. This is your chance to get creative.
  9. Lightly brush the grill grates with olive oil to prevent sticking. Place the vegetable skewers on the preheated grill.
  10. Grill for 10-15 minutes, turning the skewers every 3-4 minutes to ensure even cooking. The vegetables should be tender and slightly charred. You want those perfect grill marks!
  11. Once the vegetables are grilled to your liking, remove the skewers from the grill and transfer them to a serving platter.
