overnight oats with tropical fruits in a mason jar

Ever find yourself craving a tropical escape, but stuck in your kitchen? Me too! That's why I created these Tropical Sunrise Overnight Oats. Imagine waking up to a jar full of creamy, dreamy oats bursting with the flavors of mango, pineapple, and coconut. It's like a mini-vacation in a jar, and honestly, its so simple to put together. I forgot to set my alarm yesterday and I was so tired, I accidentally pourd coffee creamer insted of milk. I've been finding my self making mistakes lately... I dont know why. Anyway, its something you can prep the night before, so you can grab and go in the morning. No cooking required!

If you love all things tropical (like I do – I have a slight obsession with anything coconut flavored), then this recipe is definitely for you. Its perfect for a quick breakfast, a satisfying snack, or even a healthy dessert. So, lets bring a little sunshine into your day, shall we?

What makes these overnight oats so special? Well, besides the obvious tropical flavors, its also incredibly versatile. You can easily adapt it to your dietary needs and preferences. Use almond milk if you're dairy-free, add protein powder for an extra boost, or swap out the honey for maple syrup if you're vegan. The possibilities are endless!

One of my favorite things about this recipe is how customizable it is. You can adjust the amount of each ingredient to suit your taste. Not a fan of pineapple? No problem, use papaya instead! Love coconut? Go ahead and add more! This is your breakfast, your way.

📖 Instructions

  1. Prep Your Jar: Grab your mason jar (or any airtight container). Make sure it's clean and ready to go. Nobody wants gritty oats!
  2. Add Oats: Pour in the rolled oats. I usually use old-fashioned oats because I love the texture, but quick oats work too if you're in a pinch. Just, promise me you won't use steel-cut oats for this recipe? They need actual cooking.
  3. Stir in Chia Seeds: Add the chia seeds. These little guys are nutritional powerhouses and help thicken the oats to that perfect creamy consistency. Trust me, they're worth it!
  4. Sweeten it Up: Pour in the honey or maple syrup. Adjust the amount to your liking – I have a sweet tooth, so I go a little heavier on the honey. Don't worry, this step is optional, too.
  5. Pour in Milk: Pour in the milk. Again, any milk will do! Almond milk is my go-to, but coconut milk adds a nice tropical twist. You can also use soy or cow's milk, depending on what you like.
  6. Add Yogurt (Optional): If you're using yogurt, stir it in now. This makes the oats extra creamy and adds a protein boost. Greek yogurt is my favorite for this!
  7. Add Tropical Flavors: Okay, here's where the magic happens! Mix in the shredded coconut, mango chunks, and pineapple chunks. Make sure everything is evenly distributed so you get a little bit of everything in each bite.
  8. Stir it All Together: Give everything a good stir to make sure all the ingredients are well combined. You want the oats to be fully submerged in the milk mixture.
  9. Seal and Refrigerate: Screw on the lid (or seal the container) and pop it into the refrigerator. Let it sit overnight, or for at least 6 hours. This allows the oats to soften and absorb all those delicious flavors.
  10. Give It Another Stir: In the morning, take the oats out of the fridge and give them another good stir. Sometimes the chia seeds can clump up a bit, so this helps break them up.
  11. Add More Toppings (Optional): Now for the fun part! Top with extra shredded coconut, mango, and pineapple. A sprinkle of toasted macadamia nuts is also amazing if you have them on hand.
  12. Enjoy Your Tropical Sunrise: Grab a spoon and dig in! This is best eaten cold straight from the fridge. I kid you not, its like a mini vacation in a jar.
  13. Optional Boost: Stir in protein powder right before eating for an added protien and energy.

📝 Notes

  • For a thicker consistency, use more chia seeds or less milk.
  • Feel free to add other tropical fruits like papaya or kiwi.
  • If you dont have fresh fruit, frozen works just as well (just thaw it first).
