  3. Add the melted butter to the dry ingredients. Mix until the mixture forms a crumbly dough. The texture should resemble wet sand.
  4. Press the dough evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Use the bottom of a measuring cup to smooth and firmly press the dough. Make sure there aren’t any thin spots, particularly along the edges.
  5. Prick the bottom of the crust with a fork several times. This helps prevent the crust from puffing up during baking. Line the crust with parchment paper and fill with pie weights or dried beans. Blind bake for 15 minutes.
  6. Remove the parchment paper and pie weights. Bake for another 10-12 minutes, or until the crust is lightly golden brown. Watch it closely to prevent burning. Let the crust cool completely on a wire rack before adding the filling.
  7. While the crust is cooling, prepare the filling. In a large mixing bowl, beat the cream cheese and sweetener with an electric mixer until smooth and creamy. Ensure there are no lumps of cream cheese remaining.
