Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours. This step is important for infusing the chicken with flavor!
  3. Preheat the Grill: Preheat your grill to medium-high heat (about 375°F or 190°C). Make sure the grill grates are clean and lightly oiled to prevent sticking. A clean grill is a happy grill, trust me.
  4. Grill the Chicken: Remove the marinated chicken breasts from the refrigerator. Place them on the preheated grill. Grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure accurate readings. Nobody wants undercooked chicken!
  5. Rest the Chicken: Once the chicken is cooked through, remove it from the grill and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute, resulting in juicier and more flavorful chicken.
  6. Slice and Serve: Slice the grilled chicken breasts against the grain. Drizzle with additional peanut sauce and garnish with chopped cilantro and sesame seeds. Serve immediately with your favorite sides. I usually do a salad with rice.
  7. Assemble and Serve: Serve the grilled chicken hot. Make sure to drizzle generously with the peanut sauce and then garnish with freshly chopped cilantro and a sprinkle of sesame seeds. If you want to be fancy, add some thinly sliced scallions. The aromatics will make the dish even more attractive.
