I remember the first time I tried a green smoothie. I was skeptical, to say the least. Parsley? In a smoothie? Really? But a friend convinced me to give it a try, and wow, was I surprised. It was refreshing, delicious, and gave me a burst of energy that I never expected. That's how my love affair with green smoothies began. Now, I make them all the time, experimenting with different combinations of fruits, veggies, and herbs. This Parsley Peach Green Smoothie is one of my favorites. It's the perfect balance of sweet, savory, and oh-so-good for you.
This Parsley Peach Green Smoothie is packed with vitamins, minerals, and antioxidants. Spinach is a great source of iron and vitamins A and C, while peaches are rich in vitamin C and fiber. Parsley adds a boost of vitamins K and A, as well as antioxidants. And if you add ginger, you'll get a dose of anti-inflammatory compounds. It's like a multivitamin in a glass!
Ready to give it a try? I know it might sound a little out there, but trust me on this one. The parsley flavor is subtle and blends beautifully with the sweetness of the peach. And the spinach? You won't even taste it! This smoothie is quick, easy, and a fantastic way to start your day or fuel your afternoon. Plus, it's a great way to sneak in some extra greens without even realizing it. So, grab your blender and let's get started!

📖 Instructions
First, give those leafy greens a good rinse. Nobody wants sandy spinach in their smoothie! Wash about 1 cup of fresh spinach thoroughly under cold water.
Next, wash and roughly chop a 1/4 cup of fresh parsley. Don't worry about being too precise; the blender will take care of the rest.
Now, time for the star of the show – the peach! Wash one ripe peach, remove the pit, and chop it into chunks. I like to leave the skin on for extra nutrients, but feel free to peel it if you prefer.
If you're using fresh ginger (and I highly recommend it!), peel a small knob (about 1/2 inch) and slice it thinly. Ginger adds a zing that complements the other flavors beautifully.
Grab your blender! Add the spinach, parsley, peach chunks, and sliced ginger (if using) to the blender.
Pour in 1 cup of your choice of liquid. Water works just fine, but almond milk, coconut water, or even a splash of apple juice can add extra flavor.
If you like a sweeter smoothie, now's the time to add a touch of honey, maple syrup, or a couple of dates. I usually skip this, as the peach provides enough sweetness for me.
Blend on high speed until everything is smooth and creamy. This usually takes about 30-60 seconds, depending on your blender.
Give it a taste! If the smoothie is too thick, add more liquid. If it's not sweet enough, add a touch of sweetener. Adjust to your liking.
Pour your Parsley Peach Green Smoothie into a glass and enjoy immediately! You can garnish with a slice of peach or a sprig of parsley if you're feeling fancy.
