  1. Begin by pressing the tofu: Wrap the tofu block in several layers of paper towels. Place a heavy object on top (like a cast-iron skillet or a stack of books) and let it press for at least 20 minutes to remove excess water. The drier the tofu, the better it will brown.
  2. Prepare the tofu: After pressing, cut the tofu into bite-sized cubes, about 1-inch in size. Place the tofu cubes in a mixing bowl.
  3. Marinate the tofu: In a small bowl, whisk together 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, and a pinch of black pepper. Pour the marinade over the tofu cubes and gently toss to coat evenly. Let it sit for at least 15 minutes, or up to 30 minutes, to absorb the flavors. While the tofu marinates, prepare the other ingredients.
