  1. First, you'll want to gather your ingredients. I know, stating the obvious! But seriously, having everything prepped and ready to go makes the whole process smoother. Wash your berries and segment your grapefruit. If you're using pre-segmented grapefruit, you're already winning at life.
  2. Next, grab your parfait glasses (or any clear glass will do – even a mason jar!). We're gonna build this thing layer by layer, so the presentation is part of the fun. I use these tall sundae glasses I got at a garage sale for like, two dollars. Best find ever.
  3. Spoon a layer of Greek yogurt into the bottom of each glass. About 2-3 tablespoons should do it. You can use plain, vanilla, or even honey-flavored yogurt, depending on your preference. I like plain because it lets the grapefruit and berries really shine. And it has less sugar!
  4. Sprinkle a layer of granola over the yogurt. Use about 1-2 tablespoons per glass. I'm partial to a honey-nut granola, but any kind will work. If you're feeling ambitious, you could even make your own! Next time, I'm adding pecans!
  5. Add a layer of grapefruit segments. Arrange them artfully! (Or just toss them in; no judgment here.) Aim for about 1/4 cup of grapefruit per glass. Make sure to remove any seeds or pith (the white membrane) – that stuff can be bitter.
  6. Top with a generous handful of mixed berries. I usually use a combination of strawberries, blueberries, raspberries, and blackberries. But hey, use whatever berries you like! Again, about 1/4 cup per glass is a good starting point.
  7. Repeat layers of yogurt, granola, grapefruit, and berries until your glasses are full. Feel free to get creative with the layering order! There’s really no right or wrong way to do it.
  8. Finally, garnish with a sprig of mint or a few extra berries on top. This step is totally optional, but it makes the parfaits look extra fancy. Plus, mint just smells amazing.
  9. Serve immediately, or chill for later. If you're making these ahead of time, I recommend waiting to add the granola until just before serving, so it doesn't get soggy. Nobody likes soggy granola.
  10. Eat with gusto! This parfait is best enjoyed with a spoon and a smile. Savor the contrasting flavors and textures – the tartness of the grapefruit, the sweetness of the berries, the creaminess of the yogurt, and the crunch of the granola. It's a party in your mouth!
