Grab your favorite glasses or parfait dishes. I find that clear glass shows off the beautiful layers best!
Begin by spooning a layer of yogurt into the bottom of each glass. About 1/4 cup per glass should do it.
Next, sprinkle a generous layer of spelt granola over the yogurt. I like to use homemade, but store-bought works perfectly fine too. Aim for about 2 tablespoons per glass.
Add a layer of your favorite berries. Fresh or frozen (thawed) both work well. I use a mix of blueberries and raspberries. Probably around 1/4 cup, maybe a lil more depending on your berry lovin'.
Repeat layers of yogurt, granola, and berries until you reach the top of the glass. Don't be afraid to get creative with your layering!
Garnish with extra berries and a sprinkle of granola. A drizzle of honey or maple syrup is optional, but adds a touch of extra sweetness if you desire. I usually skip it though, its sweet enough for me!
Serve immediately or chill for later. These parfaits are great for meal prepping! If chilling, add the granola just before serving to prevent it from getting soggy. Nobody likes soggy granola, right?
