  3. Combine wet and dry: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine. Overmixing can result in tough pancakes. I'd say that's a mistake, wouldn't you?
  4. Fold in cherries: Gently fold in the chopped cherries (fresh or frozen, thawed) into the batter. Make sure they're evenly distributed. If using frozen cherries, pat them dry with a paper towel to remove excess moisture. Some times its easier to add them on the pan, but hey, that's just me.
  5. Heat griddle or pan: Heat a lightly oiled griddle or non-stick pan over medium heat. To test if it’s ready, drop a tiny bit of batter onto the surface; it should sizzle gently and brown evenly.
