Mix wet ingredients: In a separate bowl, whisk together the eggs, milk (or dairy-free alternative), melted butter (or oil), and vanilla extract. I like to use a fork for this, makes the eggs look extra fluffy.
Combine wet and dry: Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine. Overmixing can result in tough pancakes. I'd say that's a mistake, wouldn't you?
Fold in cherries: Gently fold in the chopped cherries (fresh or frozen, thawed) into the batter. Make sure they're evenly distributed. If using frozen cherries, pat them dry with a paper towel to remove excess moisture. Some times its easier to add them on the pan, but hey, that's just me.
Heat griddle or pan: Heat a lightly oiled griddle or non-stick pan over medium heat. To test if it’s ready, drop a tiny bit of batter onto the surface; it should sizzle gently and brown evenly.
Pour batter: Pour ¼ cup of batter onto the hot griddle for each pancake. Leave enough space between pancakes so they don’t run into each other.
Cook pancakes: Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set. Sometimes, I like to flip them twice just to make sure they are cooked to perfection. Burnt pancakes are not my thing!
Serve immediately: Serve the pancakes immediately with your favorite toppings, such as whipped cream, chocolate shavings, extra cherries, or maple syrup. These are best enjoyed fresh! And trust me you wouldn't want to wait.
