  2. Wash all the vegetables thoroughly. Nobody wants gritty salad.
  3. Cut the cucumber in half lengthwise, and then slice it into half-moons about 1/4 inch thick. I find this the perfect size for a satisfying crunch.
  4. Dice the tomatoes into bite-sized pieces. If you're using larger tomatoes, remove the core first.
  5. Slice the red onion thinly. If you find red onion too strong, soak the slices in cold water for 10 minutes; this mellows the flavor, I swear!
  6. Halve or quarter the Kalamata olives, depending on their size. Make sure they're pitted!
  7. In a large bowl, gently combine the cucumbers, tomatoes, red onion, and olives. Don't overmix; you want to keep everything looking fresh.
  8. Crumble the feta cheese over the top of the salad. Don't skimp on the feta; it's what makes this salad sing!
  9. In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust the seasoning as needed. I'm kind of picky when it comes to this, lol!
