There’s something incredibly comforting about a dump cake, isn’t there? It's like a warm hug on a plate. But have you ever thought about elevating that comfort with delicate crepes and the tangy twist of rhubarb? Rhubarb Crepe Dump Cake is an easy to make, it’s a delightful dessert that combines the simplicity of a dump cake with the sophistication of crepes, all while showcasing the unique tartness of rhubarb. This is one of my go-to’s when I feel like I’m in need of a sweet escape from the real world.

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. I usually use butter for this, but cooking spray will do the trick too!
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt. Make sure there are no clumps!
  3. In a seperate bowl, combine the eggs, milk, melted butter, and vanilla extract. Whisk untill everything is well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix!
  5. Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot surface for each crepe.
  6. Cook for 2-3 minutes per side, or until golden brown. Repeat with the remaining batter. Set crepes aside.
  7. In a medium bowl, gently toss the rhubarb with the sugar and lemon zest. This helps draw out some of the moisture from the rhubarb and enhances the flavor.
  8. In another bowl, beat the cream cheese and confectioners' sugar until smooth and creamy. It shoudl be like a cloud!
  9. Arrange half of the crepes in the prepared baking dish. Spread the cream cheese mixture evenly over the crepes.
  10. Top with the rhubarb mixture, then cover with the remaining crepes. Dot the top with butter.
  11. Bake in the preheated oven for 45-50 minutes, or until golden brown and bubbly. Let it cool slightly before serving. This will help it set and prevent it from falling apart.
  12. Let the dump cake cool for at least 15 minutes before serving. This allows the filling to set and the flavors to meld together even more. Serve warm, and enjoy!
