  2. Prepare the Rhubarb: Wash and trim 1 pound of rhubarb stalks. Cut them into 1/2-inch pieces.
  3. Stew the Rhubarb: In a saucepan, combine the rhubarb, 1/2 cup of granulated sugar, and 2 tablespoons of water. Cook over medium heat, stirring occasionally, until the rhubarb is tender but still holds its shape, about 8-10 minutes. Remove from heat and let it cool slightly.
  4. Make the Custard Base: In a large bowl, whisk together 4 large egg yolks, 1/4 cup of granulated sugar, 1/4 cup of heavy cream, 1/2 cup of whole milk, 2 tablespoons of Dolcetto wine, 1 teaspoon of vanilla extract, and a pinch of salt until well combined.
  5. Assemble the Custard: Arrange the stewed rhubarb evenly in the prepared pie dish. Pour the custard mixture over the rhubarb, ensuring it is evenly distributed.
