  2. Next, grab your watermelon and place it on a cutting board. With a large knife, carefully slice off the rind. Cut the watermelon into bite-sized cubes, about 1-inch in size. Transfer the cubed watermelon to a large bowl. Be mindful to remove any seeds you find along the way!
  3. Take the block of feta cheese and cut it into cubes similar in size to the watermelon pieces. Aim for about 1/2-inch to 3/4-inch cubes. Add the feta to the bowl with the watermelon. Nows not the time to crumble the feta, we want nice bites.
  4. In a small bowl, whisk together 3 tablespoons of extra virgin olive oil, 2 tablespoons of balsamic vinegar, 1 tablespoon of honey (or maple syrup if you're going vegan), and a pinch of salt and black pepper.
