  4. In a separate bowl, whisk together 3 cups of all-purpose flour, 3 teaspoons of baking powder, and 1/2 teaspoon of salt. Don't skip the whisking! This ensures the baking powder and salt are evenly distributed.

  9. While the cakes are cooling, prepare the frosting. In a large bowl, beat together 1 cup (2 sticks) of unsalted butter, softened, and 4 cups of powdered sugar until smooth and creamy. Add 1/4 cup of milk and 1 teaspoon of vanilla extract, and beat until light and fluffy. If the frosting is too thick, add a little more milk, a tablespoon at a time. If it's too thin, add a little more powdered sugar.
