Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan. You can also line the pan with parchment paper for easy removal.
In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, 1/4 teaspoon of ground cloves, and 1/2 teaspoon of salt. Make sure to get rid of all the lumps and clumps. I hate clumps.
In a separate large bowl, combine 1 (15 ounce) can of LIBBY’S 100% Pure Pumpkin, 1 cup of granulated sugar, 1/2 cup of vegetable oil, 2 large eggs, and 1 teaspoon of vanilla extract. Mix well until everything is smoothly combined.
Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix! Overmixing can lead to a tough bread. A few streaks of flour are okay at this stage.
Pour the batter into the prepared loaf pan, spreading it evenly.
Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out with just a few moist crumbs attached. Every oven is different, so start checking for doneness around 50 minutes.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slicing it while it's still warm is tempting, but it's easier to slice neatly once it's cooled.
