I remeber when my grandma used to make pasta dishes like this, especailly when the weather turned cold. There's something about creamy pasta that just warms you up from the inside out, right? And this recipe takes that cozy feeling to the next level with the addition of ranch seasoning and savory beef. You know, it’s not just about the taste (though, trust me, it's delicious), but also about the memories and feelings it evokes. Every time I make this, I think of her. She was truly the best cook.
Seriously, this Ranch Beef Pasta is one of those dishes that just hits the spot. It’s creamy, savory, and totally satisfying. Perfect for a weeknight dinner when you want something quick and easy but still packed with flavor. I mean who does'nt love pasta?, especialyl creamy pasta
One of the things I love most about this recipe is how versatile it is. You can easily adapt it to use whatever pasta you have on hand. Penne, rotini, or even good ol' spaghetti all work great. And if you’re feeling extra adventurous, try adding some veggies like peas or bell peppers. Trust me, it’s hard to mess this one up! My friend, Sarah, actually tried adding some mushrooms once. Though skeptical, it turned out AMAZING! I think that the creaminess and ranch just blends well with everything.

📖 Instructions
Get Started: In a large skillet or pot, brown the ground beef over medium-high heat. Make sure to break it up into smaller pieces as it cooks. Drain any excess grease.
Add the Ranch: Stir in the ranch seasoning mix and the cream cheese. Reduce heat to low and cook, stirring occasionally, until the cream cheese is melted and everything is well combined. This usually takes about 5-7 minutes. Tip: Make sure the cream cheese is softened before adding it to the skillet. It'll melt much easier and quicker!
Incorporate the Liquids: Pour in the milk and chicken broth. Stir well to ensure there are no lumps. Bring the mixture to a simmer. Visual Cue: The sauce should start to thicken slightly.
Cook the Pasta: Add the uncooked pasta to the skillet. Make sure the pasta is fully submerged in the sauce. If needed, add a little more chicken broth or water. I mean, who doesn't love cooking all in one pot?!
Simmer and Stir: Cover the skillet and simmer for about 12-15 minutes, or until the pasta is cooked through and the sauce has thickened to your desired consistency. Stir occasionally to prevent the pasta from sticking to the bottom of the skillet. This part, you will have to check yourself. If the sauce is too thick, add a little more milk or broth. If it's too thin, remove the lid and let it simmer for a few more minutes. A tip i can provide is to make sure you are not burning the sauce.
Cheese it Up: Stir in the shredded cheddar cheese until it is melted and the sauce is smooth and creamy. Mmm, cheese!
Season to Perfection: Season with salt and pepper to taste. Remember, the ranch seasoning already has some salt, so be careful not to over-salt it. But, you know, I always add more lol
Serve: Garnish with fresh parsley, chives or green onions, if desired. Serve immediately and enjoy every creamy, beefy bite! I think my favorite part is when the cheese stretch when you're about to put it in your mouth, yum!
