  2. Sauté the aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onions and cook until they're soft and translucent, about 5-7 minutes. Then, add the minced garlic and ginger. Cook for another minute until fragrant. Be careful not to burn the garlic!
  3. Add the spices: Stir in the ground cumin, coriander, turmeric, chili powder, and garam masala. Cook the spices for about 1-2 minutes, stirring constantly, until they become fragrant. This step is crucial for unlocking the full flavor of the spices.
  4. Incorporate the tomatoes: Add the diced tomatoes and tomato paste to the pot. Stir well to combine. Cook for about 5-7 minutes, allowing the tomatoes to break down and thicken slightly. I accidently burned them one time when i forgot about them!

Cover the pot and let it simmer for at least 20-25 minutes, or longer if you want the flavors to meld even more. The longer it simmers, the richer the flavor becomes.
  7. Season and adjust: After simmering, season with salt and pepper to taste. If you like, add a squeeze of lemon juice or lime juice for brightness. Check the consistency of the curry. If it’s too thick, add a little more vegetable broth. If it's too thin, simmer it uncovered for a few more minutes.
  8. Garnish and serve: Garnish with fresh cilantro leaves. Serve the chickpea curry hot with basmati rice, naan bread, or quinoa. A dollop of yogurt or a sprinkle of red pepper flakes can add an extra touch of flavor and visual appeal.
